Toasted Mushroom Roll-Ups

Ingredients
- 1/2 lb. assorted mushrooms
- 4 tablespoons butter, plus additonal for brushing on rolls prior to toasting
- 3 tablespoons flour
- 1 cup half and half
- 1 tablespoon minced chives
- 1 teaspoon lemon juice
- 1/2 teaspoon Fox Point
- salt and pepper to taste
- 21 slices white bread, crusts removed

Preparation
Step 1
Melt butter in suate pan. Saute mushrooms over medium heat 3-4 minutes or until softened. Remove from heat.
Process mushrooms in food processor until finely chopped. Return to pan. Blend in flour. Whisk in half and half. Return to medium-low heat, cooking until mixture thickens, stirring frequently. Remove from heat. Stir in chives, lemon juice and Fox Point. Season with salt and pepper. Let cool.
Flatten bread slices with a rolling pin. Spread each slicce with mushroom mixture. Roll up bread slices and place seam side down on a cookie sheet. Freeze 2 hours. Cut each log into thirds. Store in freezer bag.
When ready to bake: preheat oven to 400 degrees. Brush roll ups with additional melted butter (may use cooking spray). Bake for 15 minutes, turning twice.
