Ingredients
- 1 (3-4 lb Leg of Lamb boned if possible
- Salt and Pepper
- 1 Tablespoon chopped fresh thyme
- 1 Tablespoon chopped fresh rosemary
- 5 Tablespoons olive oil
- 2 Tablespoons Italian bread crumbs
- 1/3 cup white wine
- 1/3 cup chicken broth

Step 1
Preheat the oven to 450 degrees
Season the lamb with salt and pepper.
Mix the herbs together with the olive oil and bread crumbs. Rub all sides of the meat with the herb mixture. If boneless, tie up the lamb at 2 inch intervals. Place in roasting pan and bake fore about 20 minutes. Lower the oven temperature to 375 degrees.
Add the wine and broth to the pan and cook for another 30-40 minutes or until the thickest part of the lamb reaches an internal temperature of 135 degrees. Allow meat to rest for 15 minutes before slicing.
