Shrimp and Feta Papillote

Ingredients
- 1 # fresh or frozen shrimp, uncooked
- 2 c fresh or frozen corn kernels
- 2 T butter
- 2 T parsley, fresh and chopped
- 2 tomatoes, seeded and diced or 1.5 cups cherry tomatoes
- 7 oz Feta cheese (or gouda)
- 1 cucumber, diced
- Pepper

Preparation
Step 1
1.Preheat grill to high.
2.Place shrimp, corn and parsley on a large sheet of aluminum foil. (This is a papillote; a cooking method where food is cooked in a tightly sealed package)
3.Cover with a second sheet, and fold edges together to seal contents.
4.Cook with lid closed X 10 minutes, depending upon size of shrimp. Doesn’t say if you thaw them first.
5.In a large bowl, mix tomatoes, Feta and cucumber.
6.Add contents of papillote, stir and serve.
