Ingredients

  • 10 oz (mini/mezze)Penne Pasta
  • 1/2 pint -Grape or Cherry Tomatoes, halved
  • 1/2 small Red Onion, thinly sliced & quartered
  • 1/2 Green Pepper, chopped
  • 2 oz. Feta Cheese
  • 1/2 cup Black Kalamata olives, pitted and chopped
  • 1 clove garlic, minced
  • Dried Oregano, sprinkle to taste
  • S & P to taste
  • Greek Dressing (I use Ken's Steakhouse )or Italian Vinagrette
  • Parmesan Cheese

Preparation

Step 1

Cook pasta as directed until al dente. Drain and cool.

Add the rest of the ingredients and toss. Sprinkle with Parmesan cheese.
