Ingredients

  • 2 T EVOO
  • 1 lb large shrimp peeled & deveined
  • 1 T chopped garlic
  • 1 T white wine
  • 2 tsp B&B
  • 1 C Chicken stock
  • 1 C heavy cream
  • 1 T tarragon
  • Salt & Pepper
  • 1 C Blanched asparagus
  • 1 C seeded, peeled & diced tomatoes
  • 1 tsp butter
  • 1 lb cooked bow tie macaroni

Preparation

Step 1

Heat oil in skilled. Add shrimp until they turn pink.

Add garlic, wine, B&B & chicken stk.

Cook until reduced by 1/2 - add cream, tarragon, salt, pepper & simmer until sauce is tickened.

Stirr in asparagus, tomatoes, butter.

Cook until veggies are heated through. Add to cooked macaroni.
