Ingredients

  • 11 eggs - separated
  • pinch of salt
  • 1 tsp Cream of Tarter
  • 1 tsp Vanilla
  • 1 1/2 cups of sugar
  • 1 cup of cake flour - sifted 3 x's
  • Note: separate eggs - 11 whites in one bowl - for cake
  • 9 yolks in one bowl - for cake
  • 2 yolks in one bowl - this for the frosting

Preparation

Step 1

Put 9 yolks in a medium bowl and beat until thick
Put 11 whites in another large bowl (3 qt) with a pinch of salt: when foamy add 1 tsp Cream of Tarter and beat until you can tip bowl unside down.
Fold in 1 3/4 cups of sugar, then beaten egg yolks and last 1 cup of cake flour (that has been sifted 3 times) plus 1 tsp vanilla and pour in an ungreased 2-piece angel food cake pan.
Bank in a 350 oven about 45 minutes

FROSTING - use a double on the frosting.
Mix 2 yolks and 1/2 cup powered sugar in a heavy pot. Scald 1/2 cup milk in another pot. Add to yolks and sugar. Cook until thick. Cook over ice cubes. Cream 1/2 lb butter and when custard is cool, mix all together and frost cake.
