Ingredients

  • Topping:
  • 2 T olive oil
  • 1.5 lbs ground beef
  • 1 small yellow onion, diced
  • 1 small red bell pepper, diced
  • 1 t garlic powder
  • 1 egg, beaten
  • 1 cup seasoned bread crumbs
  • 1 t salt
  • 1/2 t pepper
  • 2 T Worcestershire sauce
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • dash Worcestershire sauce
  • 1/2 cup shredded cheddar cheese

Preparation

Step 1

Heat oven to 425
Brush muffin tin with olive oil or spray with nonstick spray.
In a bowl, combine the ground beef, onion, bell pepper, garlic powder, egg, bread crumbs, salt, pepper, and 2 T Worcestershire.
Mix together with clean hands.
Divide mixture into 9 balls and place into muffin tin.
In another bowl combine the topping ingredients.
Place a spoonful of topping on top of each meatloaf.
Sprinkle cheese on top.
Bake until meat is cooked through, 20-25 minutes.

Serves 9
