Ingredients
- 8 chicken thighs, skin removed
- 3/4 c. hot salsa
- 1/4 c. peanut butter
- 2 T. lime juice
- 1 T. soy sauce
- 1 t. grated ginger root
- 1/4 c. chopped peanuts
- 2 T. chopped fresh cilantro, optional

Preparation
Step 1
Slow cooker directions:
Place chicken in 3 1/2 Qt. slow cooker. Mix remaing ingredients except peanuts & cilantro.
Cover & cook on low heat 8-9 hours. Remove chicken from cooker using slotted spoon.
Remove sauce from cooker & skim fat. Pour sauce over chicken. Sprinkle with peanuts & cilantro.
Simmer sauce directions:
Combine salsa, peanut butter, lime juice, soy sauce, & ginger. Brown chicken in 13" sauce pan. Pour salsa mixture over chicken. Cover & simmer 20 minutes.
Sprinkle with peanuts & cilantro
Serve over rice.
