Ingredients
- 4 * 4 large egg, whites, only
- 1 * 1 cup berry sugar
- 1/2 * 1/2 teaspoon white vinegar
- 2 * 2 tablespoons cocoa powder
- 1 * 1 teaspoon cornstarch
- * fleur de sel
- * or coarse sea salt

Preparation
Step 1
1. Preheat oven to 250 degrees Fahrenheit.
2. In a large clean stainless steel bowl or in a kitchen mixer beat the egg whites gradually adding in sugar.
3. Add vinegar and continue to beat until whites make stiff peaks.
4. Sift together the cocoa powder and cornstarch and gently fold into the beaten egg whites.
5. Onto a parchment lined baking sheet spread meringue into 3 inch rounds (1/8 inch thick).
6. Sprinkle top with a little salt and bake meringue for 1 hour or until crisp.
7. Cool to room temperature. Keep meringue in an airtight container until ready to use.
