Ingredients

  • 1 # [450 g or 2 cups] plain flour
  • 2 heaping teaspoons, approximately 2 3/4 US, baking powder
  • 1 large pinch of salt
  • 25 g caster sugar, or white sugar
  • 100 g chilled butter
  • 280 ml milk - approximately

Preparation

Step 1

1. Preheat oven to 450°F
2. Prepare beaten egg and sugar for the glaze
3. Sift all the dry ingredients together.
4. Rub in the chilled butter until mixture resembles fine breadcrumbs.
5. Make a well in the center and add most of the milk. Mix to a soft dough adding all of the milk if required.
6. Turn out onto a floured surface and knead lightly. Roll out to a bout 1 inch thickness. Dip the cutter into flour and cut the dough into Brown of 1 1/2 inches.
7. Place scones on a floured baking tray, glaze with the beaten egg and a little water and put immediately into the hot oven.
8. In approximately 15 min., the scones should have risen and half of golden top.
9. Enjoy with Irish butter, clotted Devonshire cream and homemade jam [and dip in sugar].
