- Water 1027.5g
- Levain 136g
- Special AKA KAF AP 1,500g
- instant yeast 4g
- salt 31g
- TOTAL 2698.5g

Preparation
Step 1
Use the straight dough method.
Mix the yeast with the flour and set aside
Add the water and Levain and flour into the mixer
Mix on low speed for 5 min
Add the Salt on speed 1 until incur.
Mix on semi-med speed for 5 min
Once you see dough release from the bowl take out and
place into grease container to proof for 1 hour than turn dough
Proof for another hour and turn dough again
Refrigerate dough until time to shape, proof, and bake.
