Ingredients

  • 5 mL granulated sugar
  • 50 mL lukewarm water
  • 15 mL used
  • 250 mL milk
  • 5 mL salt
  • 625 mL all-purpose flour
  • 5 mL dry mustard
  • 1 mL baking soda
  • 175 mL cheddar cheese, grated
  • 25 mL cornmeal

Preparation

Step 1

1. In a large bowl, dissolve sugar in water. Sprinkle yeast over and let stand for 10 min.
2. In a saucepan combine milk and salt. Scrawled and let cool to lukewarm; add dissolve the dissolve yeast.
3. Add 250 mL flour, mustard, baking soda and cheese; mix until smooth. Stir in remaining flour.
4. Grease an 8 x 4" [1.5 L] loaf pan; dust with cornmeal. Place dough in pan and sprinkle more cornmeal on top.
5. Cover, let rise in warm place about 45 min., or until center of loaf is about 1 1/2 inches above pan.
6. Bake at 400°F for 25 min. or until low sounds hollow. Remove and let cool.
