  • 1 15 oz. can refried beans
  • 1 8 oz. package cream cheese
  • 1 cup sour cream
  • 1 tablespoon chili powder
  • 1/4 teaspoon cayenne pepper or 10 drops hot pepper sauce
  • 3 scallions
  • 1/2 cup shredded Cheddar or Monterey Jack cheese
  • Tortilla Chips

Preparation

Step 1

Preheat the oven to 350 degrees. Combine the refried beans, cream cheese, sour cream, chili powder and cayenne pepper or hot pepper sauce in a 1-quart ovenproof dish. Mix thoroughly.

Wash the scallions. Cut off the root tips and top 2 inches of the green ends and discard them. Cut the remaining white and green parts into 1/4 inch pieces and stir them into the bean mixture. Sprinkle cheese on top.

Cover the dish with an ovenproof lid or a piece of aluminum foil tucked around the top edge. Bake for 30 minutes, or until the mixture bubbles. Serve with tortilla chips.
