Ingredients
- 2 tablespoons cooking oil
- Pepper and salt
- 1 whole chicken
- 1 1/2 cups chicken broth
- 1 tablespoon fresh chopped herbs (rosemary, sage, thyme)

Preparation
Step 1
Add oil to hot cooker. Add pepper, salt and chicken, turn to brown. Place a trivet under the chicken and add broth and herbs. Secure lid and bring to high pressure. Turn down to maintain pressure and cook for 25 minutes. Normalize pressure and remove lid. Remove chicken and use juices as sauce.
Cooking Tips: Rinse chicken and pat dry to prevent oil splattering.
Variation:
Stuff the chicken and lay a bed of roasting vegetables beneath the chicken in place of trivet. Use twice water in place of broth and pour off after cooking to make broth
