Slightly hollow out four avocado halves and place in small baking dish. Crack an egg into each half. Bake in preheated 425-degree oven 15 to 20 minutes. Garnish as desired.
■Serve quartered hard-cooked eggs with chunks of avocado and a sprinkling of fresh herbs for breakfast.
■Mash avocado and add to egg salad.
■Add chunks to scrambled eggs. Top with a bit of Mexican queso or other cheese of your choice.
■Place mashed or sliced avocado over toasted pita. Season with salt and pepper, then top with a fried egg.
■Use a slice of avocado in place of ham next time you make eggs Benedict.
