Ingredients
- 1 lb. scallops
- 6-8 T. butter
- 1/2 T. veg. oil
- Zattarain's Lemon Pepper Breading Mix
Preparation
Step 1
Wash scallops in very cold water & refrigerate for several hrs. Take out and wash again in cold water. Dredge in Zattarain's mix, place on plate and refrigerate for 1 hr. uncovered.
High skillet on med. high (8 or higher). When butter is sizzling, add scallops and fry until browned on bottom. Flip and brown well on other side.
