Ingredients

  • 3 to 3 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 8 g package of instant yeast, about 1 tablespoon
  • 2 tablespoons nonfat dry milk
  • 3/4 teaspoon salt
  • 3/4 cup very warm water
  • 3/4 cup thick or store-bought applesauce
  • 3 egg whites
  • 1 1/2 cups whole wheat flour
  • Filling
  • 2/3 cup Brown sugar
  • 1 tablespoon ground cinnamon
  • 1 tablespoon butter, at room temperature
  • 3/4 cup raisins
  • 1/4 cup liquid honey
  • Icing (optional)
  • 1 cup sifted icing sugar
  • 2 teaspoons nonfat dry milk
  • 3 to 4 teaspoons water or skim milk
  • 1 teaspoon vanilla

Preparation

Step 1

1. In a large bowl, stir 1 cup all-purpose flour with sugar, yeast, dry milk and salt.
2. Stir in water and applesauce will stop stir in egg whites, whole-wheat flour and another cup of all-purpose flour.
3. Add in more all-purpose flour, 1/4 cup at a time, until dough is firm enough to form into a ball.
4. Knead, sprinkling more flour on board as needed, until dough is elastic and only slightly sticky, from 8 to 10 min. All of the flour may not be needed.
5. Cover with a piece of least wax paper, then a damp tea towel and let rest for 10 min.
6. Grease a 9 x 13" [3 L] baking pan.
7. Stir Brown sugar with cinnamon.
8. After dough has rested, place on a lightly dusted surface and roll dough into an 18 x 12" rectangle.
9. Spread butter over dough leaving 1 inch of one long edge free of toppings. Sprinkle with sugar mixture and raisins. Drizzle with honey. 10. Run a little water over the dough. Roll up jellyroll style, ending at the dampened edge. Pinch to seal.
11. Cut into 12 rounds. Place cut side down in pan. Cover and let rise until doubled in size, from 30 to 45 min. preheat oven to 350°F. Place pan of roles in center of oven and bake until Golden, from 25 to 30 min. 12. Set pan on rack cool for 5 min. Then, turn roles of pan so gooey underside is on top.
13. Stir icing sugar with dry milk. Stir in 3 teaspoons of water and the vanilla until smooth. Thin if necessary by stirring in 1 teaspoon water. 14. Drizzle over warm rolls.
