Ingredients
- 4 tablespoons butter
- 2 8oz cans pineapple chunks, drained
- 1/4 c. packed brown sugar
- 2 tablespoons grated fresh ginger
- 1 tablespoon lime juice
- 1 pint vanilla ice cream
Preparation
Step 1
Melt butter in a large skillet. Add pineapple, brown sugar and ginger. Cook, stirring until sugar has dissolved and pineapple begins to brown. Transfer to bowl and let cool. Stir in lime juice.
Divide ice cream among 4 bowls and spoon pineapple mixture over top. Serve immediately.
