Ingredients

  • 2 large eggs
  • 1 cup fine dry breadcrumbs
  • 1 tsp. italian seasoning
  • 2 tbsp. margarine
  • 4 chicken breasts, halved
  • 2 cups fresh sliced mushrooms
  • 375 g. Muenster cheese, sliced
  • 1-1/2 cups hot water
  • 2 tsp. chick boullion powder

Preparation

Step 1

1. Beat eggs with fork. Stir breadcrumbs and italian seasoning together in a separate bowl.

2. Melt margarine in frying pan. Dip chicken in egg, coat with crumb mixture and brown well on both sides.

3. Arrange chicken in 9"x13" baking dish. Sprinkle with 1 cup mushrooms. Lay cheese slices over top. Sprinkle with remaining mushrooms. Mix water with boullion powser. Pour over all.

4. Bake, uncovered, in 350F oven for 40 - 45 minutes until chicken is tender.
