  • 1 quart milk
  • 1/4 cup rice
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1/4 cup raisins
  • 1 Tbsp cinnamon

Preparation

Step 1

In a large saucepan combine milk and rice. Bring to a boil, reduce heat and simmer until rice is tender, about 30 minutes. Remove from heat.
Beat together eggs, 1/4 cup sugar, vanilla, salt, and raisins. Slowly stir egg mixture into rice, bring to boil, and cook 5 minutes, stirring constantly. Ladle mixture into custard cups.
Combine cinnamon with 1/4 cup sugar, sprinkle over top of custard. Bake in 350° oven until custard is set, 10 to 15 minutes.
Refrigerate when cool.
