Ingredients
- 2 tablespoons butter
- 1 orange, peeled and cut into 8 slices*
- 1/2 cup fresh-squeezed orange juice
- 1 tablespoon balsamic vinegar
- 1 tablespoon fine-chopped
- pickled ginger root
- 1/4 cup sugar
- 3 tablespoons Grand Marnier
- 1 1/2 to 2 pounds salmon fillets, skinned and cut into 4 equal pieces

Preparation
Step 1
In a nonreactive skillet, melt the butter over medium-high heat. Add the orange slices and brown lightly about 1 minute per side; remove to a plate. Add the orange juice, balsamic vinegar, pickled ginger, sugar and Grand Marnier to the skillet. Bring to a boil, stirring to dissolve the sugar, and cook 5 to 10 minutes to reduce to a syrup. Remove from heat and set aside.
On a preheated greased gas or charcoal grill (or grill pan), cook the salmon, meaty side down, 3 to 4 minutes until grill marked. Turn and cook through, brushing top with syrup. Serve drizzled with syrup and garnished with orange slices. Makes 4 servings.
