Ingredients

  • 16 small red potatoes
  • 1/2 cup milk
  • 1/4 cup butter, cubed
  • 1/2 tea. pepper
  • 1/8 tea. salt
  • 1 1/2 cups (6 oz.) shredded cheddar cheese, divided
  • 1/2 cup crumbled, cooked bacon
  • 1 cup (8 oz) sour cream
  • 1 Tbsp. minced chives

Preparation

Step 1

Place potatoes in a dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain.

Mash potatoes with the milk, butter, pepper and salt. Transfer to a greased 9-x13 baking dish. Sprinkler with 1 cup of cheese and the bacon.

Dollop with sour cream; sprinkle with choves and remaining cheese.

Bake uncovered at 350 degrees for 20-325 minutes, until cheese is melted.
