Ingredients

  • 2 small heads lettuce, crisped and torn into bite-size pieces
  • 3 tomatoes, sliced
  • 1 green pepper, seeded and sliced
  • 1 small onion, sliced and separated into rings
  • Salt and freshly ground pepper
  • Oregano
  • 6 tbsp. olive oil
  • 3 tbsp. red wine vinegar
  • 12 oz. feta cheese, rinsed and crumbled
  • 3 oz peperoncini (small green pickled peppers)
  • 3 oz. greek olives
  • 6 to 8 anchovies

Preparation

Step 1

Combine first 4 ingredients in large bowl and season to taste with salt, pepper and oregano. Drizzle oil and vinegar over salad and top with most of cheese. Toss gently but thoroughly. Transfer to serving plates and top with remaining cheese, peppers, olives, anchovies and small sprinkling of oregano.
