Ingredients
- 1 small head of lettuce, broken not cut
- 1/2 head romaine lettuce
- 1/2 cup celery, cut fine
- 1/2 cup spanish onion, cut fine
- 1/2 cup green pepper, cut fine
- 10 oz. package frozen peas, cooked and drained
- 1/2 cup cucumber, diced
- 1 large or two small carrots, shredded
- 1 pint mayonnaise
- 1 tsp. sugar
- 6 oz. grated sharp cheddar cheese
- 10 slices bacon, fried crisp, drained and crumbled.

Preparation
Step 1
Layer the first 8 ingredients in a large salad bowl in the order listed. Completely cover the top with mayonnaise, spreading mayonnaise to form a seal with the bowl. Sprinkle sugar over it. Sprinkle a layer of cheese and finish by putting the crumbled bacon on top. Cover and refrigerate 24 hours. Do not toss, even when served. Can be garnished with small cherry tomatoes.
Serves 10-12.
