  • 2 1/2 cups sugar
  • 1 cup maple syrup
  • 1 cup light cream
  • Dash of salt
  • 1/2 tsp. vanilla extract
  • 1/2 to 3/4 cup chopped pecans

Step 1

Bring sugar, maple syrup and cream to a boil, stirring constantly. Boil, stirring occasionally, until small amount forms a soft ball when dropped into cold water (234-236 degrees). Remove from heat; add salt and vanilla extract. When lukewarm, beat until mixture is stiff enough to spread. Blend in pecans Frosts two 8-9 inch cake layers.
