Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup firmly packed dark brown sugar
  • 2 large eggs
  • 1 1/2 tsp pure vanilla extract
  • 2 1/2 cups uncooked quick-cooking oats
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 (11oz) pkg semisweet chocolate chunks
  • 2 (1.55oz) chocolate candy bars, grated
  • 1 cup chopped pecans, toasted

Step 1

1. Beat butter and sugars at medium speed with an electric mixer until creamy. Add eggs and vanilla, beating until blended.

2. Pulse oats in a food processor to a fine powder. Combine oats, flour, baking powder, baking soda and salt in a large bowl; gradually add to butter mixture, beating well. Stir in chocolate chunks, grated chocolate bars, and pecans. Drop dough by 1/4 cupfuls onto lightly greased baking sheets.

3. Bake at 375F for 10-14 mins. Remove cookies to wire racks to cool completely.

TIP: Grate cold chocolate on a regular cheese box or hand held grater, also chilled, but make sure to keep the holes unclogged. Or you can take a sturdy, serrated knife and thinly chop/slice the chocolate into thin pieces
