Ingredients
- 1/3 lb (155 g) boneless beef, such as flank or sirloin, thinly sliced
- 2 tbsp (25 ml) fish sauce
- 1 tbsp (15 ml) soya sauce
- 1/2 tsp (2 ml) black pepper
- 1/2 tsp (2 ml) sugar
- 1/2 lb (250 g) medium-sized asparagus
- 2 tbsp (25ml) canola oil
- 1 tbsp (15ml) chopped garlic
- 2 tbsp (25ml) water
- 2 tbsp (25ml) thinly sliced green onion

Step 1
Mix together in a medium bowl the beef, 1 tbsp (15 ml) fish sauce, soy sauce, black pepper and sugar. Set aside 15 to 20 minutes to marinate.
Trim asparagus breaking off the tougher bottom of each stalk and cut into 2-inch (5 cm) segments on the bias.
In a large work or skillet, heat oil over high heat. When hot, add the garlic, toss well and scatter the beef in the pan. Saute briefly on one side, then stir-fry to sear the other side. Add the asparagus and toss well. Add the remaining 1 tbsp (15 ml) of fish sauce, water and green onions. Stir-fry until the asparagus is shiny and tender, but not soft, about 1 minute. Server hot or warm with white rice.
