Ingredients

  • 2/3 cup sugar
  • 1/4 lb butter or margarine
  • 1 tsp vanilla
  • 2 eggs
  • 3/4 cup self-rising flour
  • 3 TB unsweetened cocoa powder
  • 1/3 cup chopped pecans
  • 1/2 (7-oz) jar marshmallow creme
  • 1 Recipe MUD PIE Frosting (below)

Preparation

Step 1

Cream sugar, butter & vanilla till light & fluffy. Beat in eggs just to blend. Stir flour & cocoa together and add gradually to creamed mixture, beating smooth. Stir in pecans.

Spread over bottom of greased & flour dusted 8" square Pyrex baking dish. Bake 325F 30 to 35 mins or till tooth pick inserted in center comes out clean. Cool 30 mins. Spread marshmallow creme over top of cake. Spread frosting over marshmallow creme layer.

MUD PIE FROSTING:
Into blender, put 1/3 cup warm milk, 3 TB soft margarine or butter, 2 tsp vanilla, 2 3/4 cups powdered sugar & 1/4 cup unsweetened cocoa powder. Blend, high speed, till smooth. Apply to cake as directed above, refrigerating or freezing any unused frosting to use refrigerated within 2 weeks or frozen within 6 months.
