Ingredients
- 4 large baking potatoes, baked
- 2/3 cup butter
- 2/3 cup flour
- 6 cup milk, 2% or whole
- 3/4 tsp salt
- 1/2 tsp pepper
- 4-5 green onions, chopped
- 10-12 slices bacon, cooked & crumbled
- 2 cup shredded cheddar cheese
- 1 cup sour cream

Preparation
Step 1
1. Peel & dice baked potatoes.
2. Melt butter in large pan. Add flour & stir until smooth. Gradually add the milk, stirring until smooth, thickened, & starts to bubble.
3. Stir in cooked potatoes, salt, pepper, and 3/4 of the onion, cheese, & bacon. Stir until heated. Stir in sour cream.
4. Transfer soup to crock pot (optional). Keep warm on low. Just before serving, top with remaining onion, cheese, & bacon.
