Ingredients

  • Crust:
  • 1 cup flour
  • 1/2 cup butter
  • 5 Tbsp confectioner's sugar
  • Filling:
  • 3 cups cut rhubarb or peaches
  • 1/4 cup flour
  • 1 1/4 cup sugar
  • 3/4 tsp baking powder
  • 2 eggs

Preparation

Step 1

Mix flour, butter, and confectioner's sugar with hands and pat in bottom and sides of an 8" x 8" pan. Bake at 350° for 15-20 minutes until brown.
Beat eggs and mix with remaining ingredients. Pour onto baked crust. Return to oven and bake at 350° for 45 minutes.
Good with Cool Whip, ice cream, or whipped cream, or just by itself.
