A Finnish pancake, or pannukakku, is really less pancake than breakfast custard.

Ingredients
- Butter
- 4 eggs
- 2 cups milk
- 1/2 cup sugar
- 1 tsp salt
- 1 tsp vanilla
- 1 1/4 cups all-purpose flour
- 3 Tbsp melted butter
- Powdered sugar
- Warm syrup or raspberry jam for topping (optional)

Preparation
Step 1

1. Preheat oven to 400°F. Generously butter the inside of a 9-by-13-inch Pyrex baking dish.
2. Beat eggs, then add milk, sugar, salt, vanilla, and flour. Mix well. Add melted butter and mix until blended.
3. Pour batter into prepared baking dish and bake 40 minutes. The pancake will puff up dramatically as it bakes, then deflate when you remove it from oven. Let cool 5 minutes before cutting into squares. Sprinkle each with powdered sugar. Warm syrup or raspberry jam are optional toppings.
