Ingredients

  • pam
  • 2 eggs
  • 1/3 C heavy cream
  • 1/4 C water
  • 1 t sugar free maple extract
  • 1/2 C soy flour
  • 2 T splenda
  • 1 T wheat or oat bran
  • 1/4 t baking powder
  • 1/8 C chopped pecans
  • Low carb whipped cream
  • 1 C heavy cream
  • 1/3 C splenda
  • 1 t no sugar added vanilla extract

Preparation

Step 1

heat skillet over medium heat and spray with pam.

Mix all ingredients except pecans in blender for 15 seconds. Stop and scrape down the sides with a spatula and continue mixing for another 15 seconds until blended.

Pour approximately 16 mini pancakes onto the griddle and sprinkle each with a few pecans. Cook on each side for only a minute or 2. Serve hot with butter or low carb whipped cream.

Low carb whipped cream

With an electric mixer on high whip the cream just until frothy, then add the splenda and vanilla and continue to whip on high until peaks form being careful not to over beat.
