This is the original salad created by Robert Cobb in 1937 and was served at the Hollywood Brown Derby restaurant. You can make your own dressing or use bottled; but the Brown Derby dressing included with the recipe is excellent. Use Feta cheese if you do not like the flavor of Blue cheese.

Ingredients

  • 3 hard boiled eggs, peeled
  • 8 bacon slices
  • 1 head romaine, leaves torn into bite-size pieces
  • fresh herbs (your choice)
  • 2 cups chopped watercress lettuce (tough stems removed)
  • 4 cups diced cooked turkey or chicken
  • 2 avocados, pitted, peeled, diced
  • 2 tomatoes, chopped
  • 1/4 lb plus 1 oz Roguefort cheese, crumbled
  • 1/4 cup red wine vinegar
  • 1 tsp worchestershire sauce
  • 1/2 tsp dijon mustard
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/2 tsp ground black pepper
  • 1/3 cup extra virgin olive oil

Preparation

Step 1

In large salad bowl, toss lettuce/watercress.
Cook bacon in skillet over med heat until crisp on both sides; absorb on paper towels; crumble and set aside.
Compose salad. Arrange chicken, bacon, tomatoand avocado decoratively over the greens and garnish w/grated egg an chives (if using). Whisk together vinegar, worch, mustard, garlic, salt, pepper, oil. Stir in cheese.
