I know y'all have this recipe somewhere, but what book of mine would be complete without it? I DO tend to make it for every occasion! You will ALWAYS get compliments on it, and it keeps (unrefrigerated) at least a week!

Ingredients

  • 1 package pound cake mix
  • 1 stick (8 oz.) melted butter
  • 2 eggs
  • *** *** ***
  • 1 8-oz. cream cheese, room temp
  • 2 eggs
  • 1 tsp. vanilla
  • 1 stick (8 oz.) melted butter
  • 1 box powdered sugar

Preparation

Step 1

Preheat oven to 350. Spray a 9x13" pan lightly

Mix cake mix, melted butter and 2 eggs in large bowl. Beat well (several minutes). It will be a little sticky. Spread in bottom of pan (Hint: dip your fingers in water while you spread it)

Beat cream cheese, butter, vanilla & eggs in large bowl (same beaters) until blended. Gradually add all powdered sugar (reserve 1/2 c. to sprinkle on top when cooled), then beat well until well blended and fluffy. Pour on top of bottom layer and spread to corners.

Bake about 30-35 minutes, until golden brown and center is set (tester comes out clean). You can cut this into little squares (like cookies) or big pieces and top with strawberries. Sprinkle cooled cake with reserved powdered sugar.

Store covered, but not in refrigerator
