SMOKEY GRILLED BUTTERFLIED CHICKEN

Ingredients
- 1/4 cup sherry vinegar
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 2 tbs smoked paprika
- 1 tbs coarse salt
- 1 whole chicken (3-4 lbs)

Step 1
Combine vinegar, oil, garlic paprika and salt in large plastic bag.
Butterfly chicken. Loosen skin and spread some marinade underneath. Add chicken to bag and refrigerate at least 4 hrs.
Preheat grill to medium. Place chicken, skin side down, on grill. Close cover and grill 15 min. Turn chicken over, close cover and grill until thick part of breast registers 160 (about 20 min).
