GRILLED HULI HULI CHICKEN

Add halved chicken breasts for those that don't like dark meat.

Ingredients
- 1/4 cup pineapple juice
- 1/4 cup fresh lime juice
- 1/4 cup dark brown sugar
- 2 tbs ketchup
- 2 tbs dark soy sauce
- 1 tbs garlic, minced
- 1 tbs fresh ginger, minced
- 1 tbs veg oil
- salt/pepper
- 4 drumsticks/thighs

Preparation
Step 1
Whisk all ingredients except chicken (dummy).
Marinate chicken in half mixture in large ziplock bag. Reduce remaining mixture in saucepan over med-hi heat until thickened, 5 min. Set aside for basting.
Preheat grill to hi. When hot, turn off 1 burner, leaving other lit. Remove chicken from marinade and arrange on unlit portion of grill. Cook to temp of 165, approx 40 min, basting w/reserved glaze every 10 min and turning after 20 min.
