To Die for Chocolate Fudge

Ingredients
- 3 c. sugar
- 1 c. heavy cream
- 4 Tblsp. unsweetened cocoa powder
- 1 Tblsp. light corn syrup
- 1 Tblsp. unsalted butter, softened
- 1 tsp. vanilla

Preparation
Step 1
Place sugar, cream, cocoa, and corn syrup in heavy saucepan and heat over low heat, stirring constantly until smooth. Keep fudge mixture on enough heat to get it to start to bubble, but DO NOT boil.
Take a teaspoon tip's worth of fudge mixture and drop into cup of water. If the fudge forms a soft ball instead of melting into the water, the fudge is ready for the next step.
Remove fudge from heat and gently stir in butter. Stir well to incorporate the butter throughout. Add vanilla while stirring.
Pour fudge into buttered 9x9 pan. Cool before cutting into squares.
