  • 4 (6OZ) catfish fillets
  • 1/3 yellow cornmeal
  • 1 tbs paprika

Preparation

Step 1

1) sprinkle catfish fillets evenly with desired amount of salt and pepper.

2) stir together 1/3c cornmeal and 1tbs paprika in a shallow dish. dredge fillets in cornmeal mixture; coat fillets on each side lightly with vegetable cooking spray.

3) cook in hot skillet over medium heat 3-4 minutes on each side or until fish begins to flake and is opaque throughout.
