  • 3 c. shredded zucchini (about 3 medium)
  • 3 eggs
  • 1/3 c. flour
  • 1 t. salt
  • 2 c. shredded mozzarella
  • Italian seasoning

Step 1

Preheat oven to 450.

Sprinkle the shredded zucchini with salt to release some of it's moisture. Let sit for 10-15 minutes, then squeeze zucchini in a clean towel to drain liquid.

Mix zucchini, eggs & flour. Spray a baking sheet with cooking spray & spread the mixture into a large thin rectangle.

Bake for about 25 minutes or until the edges are browned. Make sure it's nice & golden on the sides and top so the crust isn't mushy.

Reduce oven to 350, sprinkle the crust with cheese & Italian seasoning. Continue baking until cheese is melted.

Let cool a few minutes, then cut into sticks. Serve with marinara or ranch.
