Ingredients

  • 4 boneless center-cut pork chops, about 1-inch thick
  • 1 T. olive oil
  • 1 c. carmelized onions
  • 3/4 c. beef stock
  • 1/4 c. dry white wine
  • 4 tsp. dijon mustard
  • 4 slices provolone cheese
  • 1-2 sprigs fresh thyme OR 1/8 tsp. dried
  • 1/2 tsp salt
  • 1/4 tsp pepper

Preparation

Step 1

Preheat oven to 350.

Heat oven-proof skillet over medium high heat. Add oil.

Sprinkle pork chops with salt & pepper, brown in skillet. Remove & set aside.

Add stock, thyme & wine to the pan & deglaze. Add carmelized onions. Cook 3-5 minutes until liquid is slightly reduced.

Spread 1 tsp. of dijon on top of each pork chop. Place chops in skillet with the onion/stock mixture.

Place the pan in oven & cook 20-25 minutes or until chops are done.

Place slice of cheese (fold in half) on top of each chop. Place skillet back in oven for 5 minutes to melt cheese.
