- 1/3 cup low-fat buttermilk
- 1 tbs Cajun seasoning
- 1/2 tsp salt
- 1 cup panko
- 2 bone-in chicken breast halves, skinned
- 2 chicken thighs, skinned
- 2 chicken drumsticks, skinned
- Cooking spray

Preparation
Step 1
Preheat oven to 400.
Combine first 3 ingredients in shallow dish. Place panko in shallow dish. Dip chicken, 1 piece at a time, in buttermilk mixture; dredge in panko.
Place chicken on baking sheet coated w/cooking spray. Lightly coat chicken w/cooking spray. Bake at 400 for 40-45 min or until done, turning after 20 min.
