Preparation
Step 1
step 1 In a small bowl, combine the grapes, tomatillos (or grape tomatoes), jalapeño, scallion, cilantro, lime juice and zest. Stir to combine completely.
step 2 In a separate bowl, using a fork, gently mash the avocado, being careful not to over-mash. Add the avocado to the mixture from Step 1 and stir to combine. Season with salt to taste.
Tomatillos look similar to small green tomatoes wrapped in a papery husk and can be found in most well-stocked produce departments. They can also be found canned, usually where other Mexican food items are sold in your local market.
It's easy to make your own whole-wheat pita chips. Here's how. Preheat the oven to 375 degrees F. Cut 3 pita breads into 24 wedges. Place them on a baking pan and spray the wedges lightly with nonstick cooking spray; then sprinkle lightly with salt or another seasoning of your choice. Bake for 15 minutes and remove from the oven and allow them to cool. Serve immediately or store for up to one week in a Ziploc® Brand Storage Bag with the Smart Zip™ Seal .
