  • 1/3 t. olive oil
  • 1 small zucchini
  • 3 T shredded carrots
  • 1 egg
  • 1/3 T fresh basil
  • 1 T grated parmesan or romano

Step 1

Dice zucchini, chop basil. Heat oil over medium, saute zucchini for 2-3 mins, set aside. Whisk egg with 1 T water, scramble, stir in zucchini, basil and cheese.
