Ingredients
- 4 small boneless skinned chicken breast halves
- 2 tablespoons honey
- 2 tablespoons dijon mustard
- 1 cup pecans
- 2 tablespoons dry bread crumbs
- 2 tablespoons flour
- 2 tablespoons butter, softened
- 1/4 cup chopped chives

Step 1
Preheat oven to 425. Trim any excess fat from chicken. Place in a 13 x 9 shallow roasting pan and add 2 tablespoons water to the pan.
Place the honey and mustard in a bowl and mix together well.
Place the pecans, bread crumbs, flour, butter and chives in a food processor. Season with salt and freshly ground black pepper and process very quickly until the mixture is coarsely chopped and comes together.
Spread the honey mustard mixture over the Chicken breasts; firmly press on the pecan crumbs with your fingers. Bake for 15 minutes or until the chicken is cooked and the crumbs are golden brown.
