Ingredients
- 3 pounds chicken drumsticks
- 3/4 cup buttermilk
- 2 tablespoons olive oil
- 1 cup cornmeal
- 1 cup dry breadcrumbs
- 1/2 teaspoon chili powder, optional
- 2 eggs
- 2 tablespoons unsalted butter, melted

Step 1
Cut 2 deep incisions into the thickest part of each of the drumsticks to provide for even cooking. Place in a bowl, add buttermilk and oil; turn to coat. Marinate for up to 3 hours for moister chicken.
Preheat oven to 350. Grease a foil lined baking sheet.
Place the cornmeal, breadcrumbs and chili powder in another bowl. Season to taste; mix together. Put the eggs in a small bowl, and whisk with 1 T water.
Dip the chicken in the egg mixture; coat with cornmeal, pressing with your fingers to make the crumbs stick. Arrange on the prepared sheet and drizzle with butter.
Bake for 45 - 50 minutes, or until the chicken is crisp and golden.
