Ingredients
- RUB: (4 pound beef brisket, trimmed)
- 2 tbsp brown sugar
- 2 tbsp chili powder
- 2 tbsp paprika
- 2 tbsp salt
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp black papper
- 1 tbsp cayene
- 2 tsps dry mustard
- 2 tsps ground cumin
- BARBECUE SAUCE: (Note, I normally make half the recipe)
- 2 tbsp vegetable oil
- 3/4 cup chopped yellow onions
- 2 tbsp chopped garlic
- 4 cups ketchup
- 1/2 cup brown sugar
- 2 tbsp Karo Syrup
- 1/2 cup apple cider vinegar
- 1/2 cup yellow mustard
- 1/4 cup worchestershire sauce
- 3 tbsp hot red pepper sauce
- 2 tsp essence seasoning ( I normally buy Emeril's creole seasoning)
- 1/2 tsp red pepper flakes, or more to taste

Step 1
For the rub, mix all seasoning together and rub to the beef brisket and wrap with plastic wrap and refrigerate overnight.
For the barbecue sauce: In a large pot, heat the oil over medium-high heat. Add the onions and cook, stirring for 4 minutes. Add the garlic and cook, stirring, for 1 minute. Add the ketchup, brown sugar, karo syrup, vinegar, mustard, worcestershire, hot sauce, Essence and red pepper flakes and bring to a boil Lower the heat and simmer, stirring occasionally, until thickened and the flavors marry, 15 to 20 minutes. Remove from the heat and let cool slightly before serving.
Makes about 4 cups.
