Ingredients

  • FLUFFY FILLING:
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 egg beaten
  • 1 egg yolk
  • 1 teaspoon baking soda
  • 1 cup hot water
  • 1 cup buttermilk
  • 2-1/4 cups all-purpose flour
  • 1/2 cup cocoa
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • fluffy filling
  • 1 egg white
  • 2-1/2 cups sifted powdered sugar
  • 1/2 cup shortening
  • 2 tablespoons all-purpose flour
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract

Step 1

Cream shortening, gradually add sugar, beating at medium speed of an electric mixer. Add beaten egg and egg yolk, beating well. Dissolve 1 teaspoon soda in hot water, add buttermilk, and set aside. Combine flour, cocoa, 1/2 teaspoon soda, and salt, add to creamed mixture alternately with buttermilk mixture, beginning and ending with flour mixture. Mix until all ingredients are moistened. Drop dough by rounded teaspoonfuls onto lightly greased cookie sheets, bake at 400 degrees for 8 minutes. Cool slightly on cookie sheets, remove to wire racks to cool. Spread flat side of half the cookies with fluffy filling, top each with a remaining cookie, flat side down. Makes 3 dozen.

Beat egg white (at room temperature) until stiff peaks form. Add remaining ingredients beat at medium speed of electric mixer until mixture is blended. Makes filling for 3 dozen pies.
