Beat 2 8 oz softened pksg cream cheese with 2/3 c sugar until light and fluffy. Add 2 eggs and 2 tsp vanillla extract and 1/2 tsp pure almond extract. Place a vanilla waffer (need 12) in bottom of paper lined muffin cups. Spoon batter into each 2/3 of way up. Bake in preheated 325 degree oven for 22-24 minutes or until edges slightly browned. Cool in pan on wire rack. They will deflate in center upon cooling. Refrigerate 4 hours or overnight. Top with whatever, fruit, chocolate, lemon curd, powdered sugar.
