Ingredients
- 1 package dry yeast
- 1/4 cup warm water
- 1/4 cup butter flavor shortening
- 1/2 cup milk scalded
- 1/4 cup sugar
- 1 teaspoon salt
- 1/4 to 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 3/4 cup cooked mashed yams
- 1 egg beaten
- 3-3 -1/2 cups all purpose flour
- 1/4 cup butter or margarine melted

Step 1
Dissolve yeast in warm water, let stand 5 minutes. Combine shortening, milk, sugar, salt and spices in a large mixing bowl, stir until shortening melts. Cool 105 to 115 degrees. Add yams, egg, and yeast mixture, mixing well. Gradually stir in enough flour to make a soft dough. Turn dough out onto a floured surface, and knead until smooth and elastic (about 8 minutes). Place in a well-greased bowl, turning to grease top. Cover and let rise in a warm place free from drafts, 1 hour or until doubled in bulk. Punch down dough. Roll out to 3/4” thickness on a lightly floured surface. Cut with a 2” biscuit cutter, and place in a greased 13 x 9 x 2” pan. Brush with melted butter. Cover and let rise in a warm place, free from drafts, 30 minutes or until doubled in bulk. Bake at 375 degrees for 20-25 minutes or until browned. Makes 15 rolls. TO FREEZE: prepare and bake rolls as directed, cool. Wrap in aluminum foil. Let thaw, reheat in foil at 350 for 15-20 minutes
