Ingredients

  • CROUTONS:
  • 1/2 cup water
  • 1/4 cup plus 2 tablespoons vinegar
  • 1/4 cup plus 2 tablespoons sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon dry mustard
  • 1 teaspoon salt
  • 1/8 teaspoon coarsely ground pepper
  • 1/4 cup chopped onion
  • 1-1/4 cups vegetable oil
  • croutons
  • 4 cups bread cubes cut into 1/2” pieces
  • 1/4 cup butter or margarine
  • 1 clove garlic minced
  • 1 teaspoon minced fresh parsley
  • 2 tablespoons grated Parmesan cheese

Step 1

Combine first 4 ingredients in a 1 quart glass measure. Microwave at high, uncovered, 4-5 minutes or until mixture boils and thickens, stirring once. Cool slightly. Pour into container of electric blender, add mustard, salt, pepper, and onion, process 30 seconds. With blender running, slowly add oil. Pour into desired containers. Serve dressing with croutons over salad greens. Makes 2-1/2 cups.

Place bread cubes in a 9” glass pie-plate; set aside. Place butter and garlic in a 1 cup glass measure, microwave on high for 45 second to 1 minute or until butter melts. Drizzle over bread cubes, tossing to coat. Sprinkle with parsley and cheese. Microwave on high, uncovered, 5-6 minutes or until lightly toasted, stirring 2-3 times. Let cool. Store in airtight container. Makes 2 cups.
